Machine uses X-rays, algorithms, and water jets to cut a perfect fish fillet in under a second

The food processing industry always seems to use some of the most sophisticated technologies in manufacturing.  In many cases, such as this one, technologies converge to provide an efficient and compact plant setup.  In this fish process plant, Marel processing equipment (FleXicut) combines X-ray technology for bone detection (with an accuracy of 0.2mm), water-jet cutting for bone removal, advanced software that optimizes the utilization of the fillet, and a distribution system that automatically allocates each of the various outputs to different packing lines.  Overall, this automation reduces the need for skilled labor, and greatly improves overall yield and quality.
